Ingredients

  • ¾ cup unsalted butter softened to room temperature
  • 1 cup dark brown sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 ½ cups Kodiak Cakes Mix Buttermilk variety
  • 1 cup whole oats
  • ¾ cup semi-sweet chocolate chips

Instructions

  • Set your oven to 350°F. Line a rimmed baking sheet with a silicone baking mat or parchment paper. Set it aside.
  • In a large mixing bowl, add the softened unsalted butter and dark brown sugar. Cream them together until light and fluffy. Add the large egg and pure vanilla extract to the butter mixture. Mix until well combined.
  • Gradually mix in the Kodiak Cakes mix and oats. Stir until just combined, ensuring no dry pockets remain.
  • Add the semi-sweet chocolate chips (or your preferred mix-ins) and stir evenly throughout the dough.
  • Using a small cookie scoop, portion the dough into balls and place them on the prepared baking sheet. Space them evenly to allow for spreading during baking.
  • Bake the cookies in the preheated oven for 9–11 minutes, or until the edges are lightly golden. For best results, aim for the full 11 minutes in an electric convection oven.
  • Let the cookies cool on the baking sheet for 2–3 minutes before transferring them to a wire rack to cool completely.
