Ingredients

  • 3 ripe avocados
  • 1 teaspoon salt adjust to taste
  • Juice of 1 fresh lime
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons finely diced red onion
  • 1 teaspoon minced jalapeño optional, for heat

Instructions

  • Gently press on the fat end of each avocado. If it gives a little without feeling mushy, it’s good to go. Too firm? Leave it on the counter for a day or two.
  • Use a knife to carefully slice the avocado around the pit. Twist to open it up. Remove the pit and scoop the green goodness into a bowl.
  • Sprinkle in the salt and squeeze in that fresh lime juice. Pro tip: use a lime squeezer to release both juice and essential oils from the lime skin-next-level flavor!
  • Use a potato masher (or fork) to mash the avocado. Keep it chunky-that’s the Qdoba vibe. Smooth with texture.
  • Stir in chopped cilantro, diced red onion, and jalapeño. Mix gently. Taste and adjust the salt or lime if needed.
  • Grab your chips, tacos, or spoon (no judgment) and dig in!

Notes

Press plastic wrap directly onto the surface of the guacamole. Or, smooth it out in a container and add a thin layer of lime juice on top before sealing. Store in the fridge for up to 2 days. But let’s be honest-it probably won’t last that long.
