Ingredients
  

  • 3 lbs pork shoulder trimmed
  • 1 onion diced
  • 4 cloves garlic minced
  • 1 cup chicken broth
  • 1 cup BBQ sauce your favorite brand works!
  • 2 tbsp brown sugar
  • 2 tbsp apple cider vinegar
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions
 

  • Start by trimming off any extra fat from the pork shoulder. Cut it into medium chunks and season it all over with salt and pepper.
  • Heat some oil in a skillet or Dutch oven over medium-high heat. Sear the pork pieces on all sides until they’re nice and golden brown. This locks in the flavor-don’t skip it!
  • Remove the pork and set it aside. In the same skillet, toss in the diced onions and minced garlic. Cook them until they’re soft and smelling amazing.
  • Transfer the pork to your slow cooker. Pour the sautéed onions and garlic over the top. Then add the chicken broth, BBQ sauce, brown sugar, apple cider vinegar, chili powder, cumin, and smoked paprika. Stir everything to coat the pork.
  • Cover and cook on low for 6–8 hours. When the pork shreds easily with a fork, you know it’s ready.6. Shred and mix: Use two forks to shred the pork right in the slow cooker. Mix it well with all those flavorful juices.
  • Give it a taste and adjust the seasoning if you want-maybe a little more BBQ sauce or a pinch of salt?
  • Pile the pulled pork high on toasted buns, spoon it over rice, or stuff it into burritos. Garnish with fresh cilantro or pickled red onions if you’re feeling fancy.

Notes

Store the pulled pork in an airtight container in the fridge for up to 4 days. It also freezes beautifully-just cool it completely, then pack it into a freezer-safe bag or container. Reheat in a skillet with a splash of broth to keep it juicy.
